This was a natural process or method of extracting oil. Heat isn’t applied during the extraction- unlike refined oil, this natural method is called cold-pressed.
In the last few decades, things have changed. Technology has taken over different spheres of our lives. There has been an arrival of refined oil, so the use of wood pressed oil is reduced and it is used rarely only in a few villages.
But, with increasing awareness of health, the wood pressed oil is making a comeback in the market. People have realized the adverse health effects caused by refined oil.
Refined oil and wood pressed oil:
Now modern methods of oil extraction are used and the oil extracted from this modern method is refined oil. It involves a high supply of heat during the process of extraction. The oilseeds are crushed and the pulp is heated in order to extract all the oil content present in the seeds.

There is a difference between wooden ghani and metal ghani extracted oils. The difference is that of the quality and health benefits. When refined oil is extracted, oil is heated at a very high temperature. This changes the molecular nature of the oil in an adverse manner. It removes most of the nutrients present in the oilseeds. Solvents are added during the preparation that makes the oil toxic in nature and harms our health.
The cold pressing method is much natural as the oil extracted will be in its natural molecular nature. The yield is less in wood pressed oil but is far healthier than the modern alternative. The old method of wooden ghani crushing was widely used. In those times fresh oil was in great demand. The flavor was an important attribute of all oils where mustard, coconut, groundnut, and safflower oils were best oils produced from the wooden ghani crushing.
Their storage quality and the nutritive value were considered to be high. But, today almost every house in the urban areas prefer refined oil.
Traditional ghani has a maximum capacity of about 50 kg per day. While modern units have twice this capacity. As a result, the running costs are high. When animals are used to operate the wooden ghani they have to train and it is expensive to feed them. Artisans also need to be trained. Thus, the modern way of metal ghani extraction is preferred. But the oil extracted by using the modern method has low nutritive value.
